- now mash the potatoes until there are no more lumps u want smooth consistancy add milk and the colby jack cheese and mix well.
- once sausage and onions are done mix well in with the potatoes. once mixing is complete place in freezer for 15-30 min untill mixure is cool all the way thru.
- in a seperate bowl beat all 3 eggs for an egg wash.
- in another bowl place bread crumbs in to coat cakes after the egg wash(experiment with different flavors of breadcrumbs mix and match).
- bring fryer oil up to temp of 350°F.
- pull potatoe cake mixture out of freezer and weigh out 3.5 oz for each cake.
- patty them up like a hamburger patty dip in egg wash and then coat with bread crumbs and set back in freezer for ten min.
- pull potatoe cakes out of freezer and cook in fryer for 5 min or until desired crisped is reached.
- place finished potatoe cake on paper towls to soak up grease.
- serve right out off paper towels u can keep them warm by placeing them in the oven @ 200°F.
